Paneer Palak

This popular Indian dish is loved for more than just its incredibly delicious flavour, it's also a plate full of health benefits!

This week I share a heart warming North Indian Recipe, Paneer Palak. To be honest, I have never really looked at the proper recipe for the real Paneer Palak, however I am sure mine can stand up to any authentic version.

You are supposed to use spinach but I used some sour herbs and kale just to change the flavour profile slightly, you can use whatever greens you like.

You will need:

500gr Paneer (curd cheese)

500gr Kale

500gr sour herbs

1 bunch mint

2 big cloves garlic chopped

2 TBS fresh turmeric grated

2 big Onions chopped

4 TBS Garam Masala

4 TBS Curry Powder

Handful of curry leaves

2 TBS coconut oil

2 TBS Butter

1 tin Coconut Milk

Directions:

Braise garlic, turmeric, onions, Garam Masala, curry powder and the curry leaves in the coconut oil and the butter.

Once fragrant and aromatic add the Kale and sour herbs and mint and cook down for about 15 minutes.

When the greens have cooked and are 1/3 in size, add the coconut milk. Cook for additional 15 minutes. When soft blend until smooth and creamy and add the paneer.

Flavour with generous amount of salt. Garnish with fresh chopped chillies and crispy onions. Serve with cucumber, mint and yoghurt salad and fragrant basmati rice.

Palak paneer is a popular Indian dish made by combining pureed spinach and paneer. Spinach is known as a good source of iron and paneer, a milk product, is a great source of calcium. So a combination of both in a single preparation, is thought to be a good source of both iron and calcium, especially for children, who would normally not eat spinach in any other form.
