Harvey's Heavenly Inspirations

The new owners and Chef Steven's arrival at Harvey's has the town talking. It has been just a couple of weeks and he has already livened up the menu, as he applies French techniques and Asian flavours to the sexy and pure, inspired presentations, to create updated versions of classic dishes everyone loves.

The culinary arts have been Chef Steven's natural calling since he was a young boy, cooking his own meals after school. He took up his first kitchen position at the age of 18, in an apprenticeship with Richard Carstens, Lynton Hall. During that time, he worked hard and indulged in avant-garde and experimental cuisine, feeding his hunger to learn, as much as he could, about the art of cooking.

A perfect introduction to Chef Steven's cuisine is the slow cooked short spare ribs, which are cooked for three hours and literally fall off the bone, served with sautÈed vegetables, carrot puree and crispy onion.

"I have tried to make every dish on this menu unique." Said Chef Steven, "The flavours are deep and hearty with my signature, Asian inspired, sexy with a twist. This menu is just an indication of where I want to take Harvey's, my challenge is to keep it fresh but to also keep an open mind about the wants and needs of my patrons."

My personal favourite must be the Arancini Di Riso, crispy fried risotto balls. This appetizer combines classic flavour pairings and incorporates different textures for an overall effect that is far more interesting than any one texture alone. Crisp to perfection and served with sweet caramelised onions, sautÈed green chives, marinated artichokes, toasted almonds and just lightly drizzled with tangy mayonnaise and finished with a balsamic glaze. Simply scrumptious.

There is a new and revived energy that has been infused into Harvey's, with the new owners, Hyno Arnold and Duncan Sutherland believe that with Harvey's central positioning and its intimate setting, they have every attribute to make it "the place" to dine in KwaZulu Natal, as well as South Africa.

"My vision and my goal is to make it to the Top ten with Harvey's, whatever it takes. I intent to bring the wow factor into the culinary world and Harvey's is my blank canvas on which I want to showcase my talents."

Chef Steven's creativity and passion has brought new inspiration to the restaurant and created exciting dining experiences that are approachable and fun. Now that the fun has begun, watch this space, as Harry's Bar, just next door, is about to get a brand new Dim Sum Bar Menu. We can't wait.
