So this week I have a deliciously nutricious recipe that can be eatern for breakfast lunch or supperhealthy and easy to prepare. I have used the very nutricious red Radicchio Treviso lettuce which are high in vitamins, minerals and antioxidentsso super healthy and good for our health. If you do not like the slightly bitter taste of the Radicchio, normal firm lettuce leaves will do.
I have asked my trusted kitchen helper Maryn to help me prepare it, it is always so much more fun to share the chores and I do want to warn you there is a lot of chopping with this recipe.
The best aspect of making this dishyou can choose your own filling. I used a lot of fresh herbscomplimeted the rawness of the herbs with the crunchiness of baby veggies.
You will need:
1 large head of Radicchio Treviso
1 large avocado chopped into small pieces
handfull of baby carrots chopped into small pieces
handfull chopped leeks
handfull chopped celery including the leaf
handfull chopped red and yellow peppers
handfull chopped snap peas
handfull chopped fresh dill
handfull chopped fresh garlic
handfull chopped onions
handfull chopped fersh chopped chillie or as much as you like
Home made mayo (or not) you can also use plain full cream yoghurt
Salt and Pepper to taste
Garlish with feta cheese
Direction:
Separate the lettuce leaves wash, dry and set aside.
Mix all the ingredients together exept the feta cheese.
Place a tablespoon of the creamy veggie mixtue into each leaf of the Radicchio Treviso lettuce, sprinkle feta cheese on top and serve just like that.
