Foodie - A Quick Thai Curry

Vegetarian Thai curry with noodle

This recipe is inspired by Wok Box Vegetarian Curry.Same same but different, as the Thai would say.

Crunchy green vegetables is the secret to this recipe also try and find good quality Sesame Seed Oil and Soy Sauce, they are the star of this very simple and very tasty dish.

Ingredients

* 1 1/2 tablespoons sesame seed oil

* 1 onion, sliced thin

* 3 cloves of garlic grated

* 1 TBS grated fresh ginger

* 2 red chillies chopped fine

* 1 to 1 1/2 teaspoons Thai green spice

* 1 1/2 tablespoons soy sauce

* 1 teaspoon brown sugar

* 1 teaspoon salt

* Green beens

* Green celery sticks

* 1 cup cauliflower tops cut into small florets

* red pepper

* 1 1/2 teaspoons lime juice

* 1/3 cup thin-sliced basil leaves

Directions:

In a wok heat the sesame seed oil and add the spices and onion, garlic, ginger and chillies. Saute gently until fragrant.

Add the beans, celery, cauliflower and red pepper and fry until crunchy (about 15min)

Add water soy sauce brown sugar lime juice and cook until tender (to your liking)

Finish off with fresh basil leaves and a drizzle of sesame seed oil

Serve with fried Thai Noodle.
