Foodie - Sharoona Styled Spicy 'Shrooms'

There is nothing I love more then getting together with girlfriends and cooking together. It's not often that you find friends who enjoy this form of bonding. I have one treasured friend who cooks for me and her food warms my body and soul and it is like nothing I ever experienced before - ok my mom cooks for me but only when she feels sorry for me and then its always the same thing, mashed potato and cabbage - mom's comfort fattening food that always makes me feel so opulently fulfilled.

Back to Sharoona styled spicy 'shrooms, these delicious mushrooms you can only buy from guys on the side of the road. If you ever thought what are these guys selling, that resembles a mutant Ninja In fact they are the delicious Makowe mushrooms, which pop up after heavy rains in our neck of the woods.

This is my version of Sharoon's Makowe Mushroom recipe

You will need:

One bag of Makowe Mushrooms, be prepared to pay around R100 for a medium size Checkers bag (4 or five medium sized mushrooms inside)

2 chopped onions

2 tspn chopped garlic

1 tspn chopped ginger

1 tspn chopped turmeric

4 chopped fresh green chili

4 tspn chili masala (I use chili pickle masala for this as Sharoona has her own blend, a secret recipe)

1 cup vegetable oil

4 TBS butter or ghee

Direction:

Prepare the mushrooms by washing them well under a running tap. These mushrooms are covered in sand and need to be washed many times to avoid any sandy crunch.

Once washed, dry the mushrooms and shred to small pieces.

In a large saucepan heat the ghee and oil and gently fry the spices with the garlic and onion until aromatic.

Place the mushrooms in the oily braised spices and fry until golden brown and crunchy.

Serve with rice roti and sambals or my Eastern European style on the bed of mashed sweet potato and yoghurt cucumber salad.
