Rethinking Food Culture

It was clear that after everything we experienced in the past fifteen months, we couldn't just continue as though nothing has happened. Having lost most of our livelihood, we consciously decided to redefine luxury as an experience that serves a higher purpose, one that maintains a genuine connection to the community and that is in support of our planet. "Eat More Plants" is now our post Covid motto, realising that by doing so we will be able to explore the incredible possibilities of plant-based cuisine, while deepening our connection to, and support of, both our environment and our planet.

Having been a vegetarian for over 30 years, the idea of removing all animal products felt limiting at first, but what I've realized now is how freeing it actually is. No preconceived notion of what a meal has to be. The options of a plant-based menu are endless, this is the most exciting time I've ever had in my life, creating food for my friends and complete strangers and having amazing feedback each time I cook.

For me it's all about finding the balance, staying conscious of the impact my footprint has on the world while feasting on the bounty which I fervently forage, source and blend to redefine flavours that are rich, yet gentle, bold yet submissive. This is what gets me up at dawn every day - creating dishes that appear in my dreams, screaming to be presented in real time.

Vegetables has never tasted this good. For every dish I make I draw inspiration from our extensive travels and from my local support at the Verulam Market. I seek out produce that is seasonal and grown ethically, preferably in someone's garden. You don't have to be a vegan to enjoy my food, this is not about changing your life, however introducing one day a week where you exclude animal products from your diet is what I'm merely suggesting.

The sun always shines after the storm ... For a long time it wasn't clear if we would make it through and it was really scary to fear losing everything that's been our life. We are grateful that we got back on our feet publishing The Bugle just once a month for the time being and so extremely proud to share my new found love of cooking.
