Foodie - So good and so easy!

Foodie - So good and so easy!

For my family and I, there is nothing yummier than a thin crust, crispy pizza steaming hot straight out my wood burning pizza oven.

Pizza dough is really easy to make. If you have time to let the dough chill in the fridge for a day or two. The slow, cool rising time helps to develop the flavours in the dough and gives the crust a better texture.

How To Make Pizza Dough

Enough for 2 pizzas

You will need:

1 teaspoon active-dry yeast

3/4 cup lukewarm water (not hot)

2 cups flour, plus more if needed

1 1/2 teaspoons salt

This is what you do:

1. Dissolve the yeast in the water: Pour the water into the bowl of a stand mixer. Sprinkle the yeast over the water, and let stand until the yeast has dissolved.

2. Stir in the flour and salt to form a dough: Add all of the flour and salt to the bowl with the water and yeast. Stir until you've formed a shaggy dough.

3. Knead the dough for about 5 minutes:Using the dough hook on a stand mixer, or kneading by hand against the counter, knead the dough until it forms a smooth, slightly tacky ball that springs back when you poke it, 5 to 8 minutes. If the dough sticks to the bowl or your hands, add a more flour until it's easier to work with.

4. Let the dough rise for 1 to 1 1/2 hours: If you're planning to make pizza today, then give the dough a rise. Clean out the mixing bowl, film it with a little oil, and transfer the dough back inside. Cover the bowl and let the dough rise until doubled in bulk, 1 to 1 1/2 hours.

5. If you have time, store the dough in the fridge:

6. Prepare the oven for baking:If your dough has been in the fridge, take it out and let it warm on the counter while the oven heats. Heat the oven as hot as it will go; put a baking stone or upside-down, heavy sheet pan in the bottom third of the oven.

7. Prepare the pizzas:Divide the dough in half, and pat or roll one of the pieces. Transfer the round of dough to the pan. Top with pizza sauce, some cheese and any toppings of your choice.

8. Bake the pizza for 5 to 10 minutes:Slide the pizza into the oven on top. Bake until the cheese is melted, the crust golden, and you see a some charred bits on the top and edges. Baking time will vary depending on the heat of your oven and how thick or thin you rolled your pizza.

9. Cool (briefly!) and eat.

How To Make Homemade Pizza Sauce

Makes about 4 cups

What You Need

1 can whole or diced tomatoes

6 to 8 garlic cloves, roughly chopped

2 teaspoons balsamic vinegar, plus more to taste

Salt

Fresh-cracked pepper

Olive oil

This is what you will do:

1. Combine the tomatoes, garlic, vinegar, 1/2 teaspoon of salt, some black pepper, and a drizzle of olive oil in a blender or food processor.Use both the tomatoes and their juices, or drain the tomatoes for a slightly thicker and more concentrated sauce.

2. Puree the sauce:Blend the ingredients until they're completely pureed.

3. Place in a pot and cook for 45 min, until think and creamy.
