So just because it is winter, it does not mean that we have to watch everything we eat. Having a few cheats here and there, helps us to stay on track. How boring would life be if we just abstained from temptations 100% of the time
This week I have a delicious chocolate chip cookie recipe. They are easy to make and simply scrumptious. I used good quality dark chocolate and added naartjie rind for that intense orange flavour. You can use conventional chocolate chips if you so desire, or just chop up your favourite hard chocolate.
Make lots and share them with your friends.
What you will need:
* 150g salted butter, softened
* 80g light brown muscovado sugar
* 80g granulated sugar
* 2 tsp vanilla extract
* 1 large egg (optional)
* 225g plain flour
* tspbicarbonate of soda
* tsp salt
* 200g plain chocolate chip or chocolate chunks
* 2 TBS finely grated naartjie rind
Directions:
1. Preheat the oven to 190C. Line two baking trays with non-stick baking paper.
2. Put the butter and sugars into a bowl and beat until creamy. Beat in the vanilla extract (and egg optional). Sieve the flour, bicarbonate of soda and salt over the mixture and mix in with a wooden spoon. Add the chocolate chips and stir well.
3. Using a teaspoon, place small mounds of the mixture well apart on the baking trays. Bake in the oven for 8-10 mins until light brown on the edges and still slightly soft in the centre.
4. Leave on the tray for a couple of minutes to firm up and then transfer to a cooling rack.
Enjoy with a cup of lemon tea or a glass of milk.
