Lobster Coconut Soup

Lobster Coconut Soup

This is my cheat version of Lobster Bisque. Hey in today's world a girl has lots to do no time to be crushing seafood shells for traditional bisque.

Ingredients

1-cup lobster meat blanched

1 -onion grated

1 -tsp crushed garlic

1- tsp crushed ginger

1-cup tomatoes grated

2 -Tablespoon lemon juice

2- Tablespoon fresh lemon grass chopped

1-teaspoon chille flakes

1 ? teaspoon salt

2 tin coconut milk

3-Tablespoon Butter

Step 1: Lets get the base going

Sauté the onions, ginger and garlic until pale in colour

Step 2: Time to spice it up

Add tomato, lemon juice, lemon grass and spices and cook for 5 minutes on high heat

Step 3: Cream and garnish

Add the blanched lobster meat and coconut milk. Mix well and leave aside. Heat just before serving.
