Foodie - Wholesome Homemade Humus

This week I have produced my version of a wholesome and filling winter humus recipe. The Humus Snack Idea is inspired by my friend and Durban Food Stylist, Janice Annetts.
There is so much written about humus. Some studies say its good for you while others say its not. Well, I am not that worried about what anyone sayshumus has been a staple diet in the Middle East and some parts of the Mediterranean and those that eat it swear by itincluding me. Lets not worry too much about the negatives, just look at the healthy snack ideas and create your own.
After all a big part of being healthy is being happy and eating food that make us happy should automatically make us healthy. Or something like that
For my humus recipe you will need:
Ingredients:
500gr dry chickpeas
1 onion chopped
5 cloves of garlic chopped
3 tsp ginger chopped
5 Medium Onions
1 whole head of garlic
cup olive oil
2 tsp thyme
1/2 cup Fresh lemon Juice
salt
pepper
freshly ground cumin
cup tahini
tsp smoked paprika
Pine nuts (as many as you can afford, they are very expensive right now)
2 TBSN Olive Oil
Directions:
Soak chickpeas overnight. Rinse and cook for 4-5 hours with the onion, garlic and ginger.
Slow roast onions and garlic in the olive oil for at least two hours in a cast iron pot.
When chickpeas are cooked blend them with the roasted onions and garlic add the lemon juice, salt, pepper, cumin thyme and olive oil.
Roast the pine nuts and smoked paprika in 2 TBSN of oil and pour on top of the humus.
Serve with pita bread and fillings of your choice or on lettuce leavesapple and orange slices or on top of a sour dough baguette. Or just munch it as it is, a big spoon of humus quenches appetite for hours.
Oh and please remember humus is a wonderful source of protein and fibre and in my humble opinion should be in your fridge at all times.
