Foodie - Sour Herb and Pea Soup

Clean living is trending at the moment, as more and more people move away from fast food and processed foods. We all want to do the right thing when it comes to our health and our overall well-being. I have been on my clean food trip for a few weeks and while everyone coughs and sneezes around me, I continue to keep the bugs out and keep my energy levels up.
Clean eating is a deceptively simple concept. Rather than revolving around the idea of ingesting more or less of some specific foods (for instance, fewer calories or more protein), the idea is more about being mindful of the food's pathway between its origin and your plate. At its simplest, clean eating is about eating whole foods, or "real" foods — those that are un- or minimally processed, refined, and handled, making them as close to their natural form as possible.
This week I have a super food recipe. It will make you strong and vibrant. You can substitute Sour Herb for spinach, watercress or Mfino (wild spinach).
You will need:
2 bunches Sour Herbs
1kg Fresh peas
kg Onion
4 Garlic cloves
2 tsp Fresh Ginger
2 tsp Fresh Turmeric
4 tsp garlic curry powder
4 TBS Coconut Oil
4 TBS Vegetable Oil
1 can Coconut Cream
1 cup of water
Fresh chopped red Chilli
Full Cream Plain Yoghurt
Direction:
In the pan heat up the coconut and vegetable oil add the curry powder and braise until aromatic, add the ginger, garlic and turmeric and allow to soften for a few moments.
Now add the onions and let them become lightly golden brown and fragrant. Add the Sour Herbs and steam for five minutes until they cook down.
Now add the Coconut Cream and the water and simmer for another five minutes.
In a separate pan cook the peas until soft.
Strain and add the peas to the Sour herb and onion pot and blend until gorgeously smooth and velvety textured.
Add salt and pepper.
Garnish with the red chilli and yoghurt. Serve with a generous slice of a buttered sour dough baguette. Enjoy.
