Chicken Curry

Chicken Curry

You will need:

Ingredients:

1 chicken skinless and cut into pieces

1 large onion chopped

2 medium tomatoes grated

4 potatoes each cut into quarters

1 tsp crushed garlic

1 tsp crushed ginger

1/2 tsp cumin seeds

2 tsp crushed red chilli flakes

1 tsp crushed corainder seeds

1 tsp crushed cumin seeds

1 tsp salt twice

1/2 tsp tumeric twice

fresh corinader leaves for garnishing

4 tblsp cooking oil

water from your kettle

Step 1

Heat the oil in a pot . Sautee the onion and whole cumin seeds in the oil just until the onion is soft. Be careful not to brown the onion.

Step 2

Wash and drain the chicken and place in a mixing bowl . To the chicken add ? tsp tumeric , ginger, garlic and salt. Now add the chicken to the sauteed onion. Let the chicken cook on low heat for 15-20minutes. It may look a little pale in colour but not to worry , we shall add a myriad of colour in a bit.

Step 3

Once the chicken is almost done add in the grated tomatoe. Give it a good stir and then add the crushed chilli flakes, crushed cumin seeds, Crushed corainder seeds , second portion of tumeric and second portion of salt. Now add some water to give the curry some consistency approximately 2 small tea cups .

Step 4

Add in the potatoes that should have been cut into fours. Let the curry now cook whilst closing the pot with its lid . At this point an abundance of fragrance should put a smile on your face. Keep on stirring and checking the pot and as soon as the potatoes are fully cooked , remove the pot from the heat.

Step 4

Garnish with fragrant chopped fresh coriander leaves and serve with cumin infused rice .
