The basis of good cooking is of International Tradition. It is indeed a skill fundamental to home making and successful entertaining. Rumour has it that "Imagination rules the world" and for many a generation so have been the ingredients associated with the unique and beautiful art of cooking amidst all cultures.

So, I as ZIRA would like you to join me on this culinary journey. I shall on a weekly basis tickle your taste buds, bring you fabulous news of the happenings in the culinary world and share my wealth of recipes with you.

How lucky I am to begin writing my first column for The Bugle just as we passed Madibas birthday. So my idea is to showcase what this legend ate whilst changing the world.

Lets begin with a tad bit of history..

On the 11 February 1990 Madiba walked his first steps to freedom, hand in hand with his then wife Winnie Mandela. He spoke to the South African people from the steps of City hall and then spent his first night of freedom at the home of the Archbishop Desmond Tutu in a leafy suburb of Cape Town.

That evening the cook was in a quandary of what should be presented at dinnertime. She decided to prepare the Archbishops favourite dish of chicken curry with rum and raisin ice cream.

Nelson Mandela's food preferences reveal the social and political significance of a multi-racial anti-apartheid alliance in which Thayanagee Pillay made coffee for prisoners awaiting trial, Farida Omar smuggled chicken curry to Nelson Mandela at Pollsmoor Prison, George Bizos cooked Greek lamb on a spit to celebrate great victories and Ray Harmel served chopped liver in times of trouble. When Madiba returned to Johannesburg he visited with Mrs Pillay as well as his old colleagues.

So here is a deliciously simple Chicken Curry , wonderful for this lovely winter season.
