CHILLI BEAN PATE
3 cups cooked Beans 1/ 4 cup Lemon Juice 1 cup Water
1/ 4 cup Olive Oil
1 tsp Salt
2 tsp Cumin
2 cloves Garlic
1 green Chilli
1 tsp Smoky Paprika
Directions:
Blend all together, until
the mixture is smooth
Soak Beans or Chick Peas for 24 hours before you cook -
It reduces the cooking time
COCONUT CRUSTED TOFU
210g firm tofu
1 grated garlic clove 1 Tbsp olive oil and 1 for frying
1 Tbsp coconut flour zest of 1 lime
1 Tbsp flax flour Pinch of salt
Directions:
Cut tofu into 2cm cubes
place in a large bowl
Add garlic, coconut flour,
ground flax, olive oil, salt and lime zest Mix and press onto tofu to form a crust Place on baking tray, spaced apart Bake for 10mins at 180 degrees
