Comfort Foods never tasted this yummy
The chilly season is upon us and thank God for this blessing. We can cuddle up to our warm blankets and eat wholesome comfort foods.
The term 'Comfort foods' does not have to carry all the negative connotations we have all been trained to believe. Comfort foods are there to keep us warm and nourished and winter veggie broths are wonderfully healthy treats on any chilly winter's night.
Ingredients:
You will need:
2 TBS Coconut oil
2 TBS Butter (or if you want to make it vegan use rice oil)
2 big onions
2 TBS finely chopped garlic
tspn cinnamon
tspn nutmeg
tspn thyme (fresh or dry)
tspn origanum (fresh or dry)
2 big sweet potatoes cut to small chunks
1 Cup green beans
1 Cup fresh asparagus
1 Cup of cauliflower
1 Cup of broccoli
1 Cup of fresh/frozen peas
1 Tin Coconut Milk
1 Tin chickpeas drained and rinsed
1 Cup chopped parsley
1 Cup chopped dill
Directions:
Heat the coconut and butter (or oil) and add the onions garlic and the herbs and spices. Braise for five to ten minutes until the onions start browning, add the sweet potatoes and let them simmer for about ten minutes then add the cauliflower, broccoli, peas and the green beans. Simmer for ten minutes.
Add the coconut milk and a 1/2 litre of water and a lemon grass stick, a heaped tablespoon of salt and the chickpeas and allow to simmer for 20 minutes or until the sweet potatoes are soft. At the end add fresh herbs and serve with a crusty slice of buttered sourdough bread!
If you are not a fan of coconut milk you are welcome to use cream. But I would encourage everyone to use coconut milk as it is truly good for us. Coconuts are highly nutritious and rich in fibre, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous. Unlike cow's milk, coconut milk is lactose free, so it can be used as a milk substitute by those withlactose intolerance. It is a popular choice with vegans and makes a great base for smoothies, milkshakes or as a dairy alternative in baking.
Coconuts are one of those foods that oscillate between the 'good' food and 'bad' food camps. Coconut milk, especially the low fat variety, can beused in moderation (1-2 times per week).Consumed in moderation, this ingredient can benefit your health and help fight infection
