Fresh Green Chilli and Spring Onion Omelette

Sunday brunches are my all time favorite. They invoke beautiful memories of my childhood. We would always awake to the fragrance of the onions being prepared for the traditional Sunday eggs. Many a time my mom would invite the entire family over for brunch and the day would be spent with the adults playing board games thereafter and us children splashing around in the swimming pool.

I call it the lavish Indian breakfast and it generally means that baked beans, lamb chops and salmon chutney accompany special eggs. In keeping with my words from last week this simple omelette recipe is that of my grandmother.

Fresh Green Chilli and Spring Onion Omelette

You will need:

4 Eggs lightly beaten

1 tsp fresh green chilli

1 cup fresh chopped spring onion

Salt to taste

Pinch of baking powder

1 tbslp Butter or Ghee (Clarified Butter)

Step 1

Heat the oven to 200 degrees Celsius

Melt butter in a non-stick medium size frying pan on the stove.

Step 2

Combine eggs, chilli, spring onion, salt and baking powder and give it a stir

Step 3

Pour egg mixture into frying pan and cook ever so lightly on the stove. Perhaps 60 seconds

Step 4

Place the frying pan into the oven and watch the egg rise. As soon as it does remove omelette from the oven and serve immediately.
