"Wine is all about Elegance and Finess" began Creation's cellar master Jean-Claude Martin. "Our long dry summers coupled with the influence of the cool breezes blowing in from the nearby ocean make it ideal for the cultivation of Rh™ne cultivars."

Beverly Hills Hotel chef Tony Kocke was meticulous when pairing the Creation wines and his elaborate menu for last week's wine evening.

The guests were welcomed by the dry and woody Sauvignon Blanc from Creation Wines. The first course of Norwegian Salmon Balantine was accompanied by Creation Wines' Viognier. While the entrée of Duck Breast presented with raspberry reduction and turnip mousse was paired with Creation's Reserve Pinot Noir.

The main course of spicy Springbok Loin was perfectly paired with the Syrah Grenach and the dessert of white chocolate mousse was paired with a fabulously robust Creation Chardonnay.

Reflecting on this magnificent match, Creation's pairing guru, Carolyn Martin, points out how the wealth of umami flavours present in the wine echo the savoury meatiness from the venison and mushrooms in the dish. "What's more, the fresh natural acidity of the wine cuts through the richness of the dish, while the delicate fruit and floral notes of the wine enhance the earthier tones of the venison," concluded Carolyn.

It was another night of successful dining at the stately Beverly Hills Hotel featuring the world acclaimed Creation Wines. It's hardly surprising that Creation Wines unique, terroir-driven Rh™ne-style wines are causing quite a stir, locally as well as internationally.
