Foodie - Children beware! You will love this recipe

Most of my recipes come from my travels. This week I am taking you on a journey to Crete, a cute island in Greece, where they make their own everything and they are one proud nation.

This is an easy recipe and its super scrumptious.

Zucchini fritters are a fast and easy snack to make, however there is one down side to these crispy delights. You have to eat them straight from the pan, or as soon as they re cooked.

You will need a punnet of Zucchini thinly sliced

Sparkling mineral water

Self-raising flour

Salt and Pepper

Vegetable oil

Directions:

Mix flour, sparkling water, salt and pepper. Place the thinly sliced Zucchini in the batter and place in a freezer for ten minutes.

In a non-stick frying pan heat a little oil and place the chilled slices of coated Zucchini in the hot oil. Fry until golden brown.

I served my Zucchini with a Beetroot and Apple salad. Which is so easy to make and livens up the crispy Zucchini fritters.

For the Beetroot and Apple salad you will need a bunch of beetroot, two apples, juice of one lemon, sugar and salt to taste.

Cook the beetroot until soft set aside and cool. Peel the apples and grate. Add the lemon juice. Once the beetroot is cooled grate them and add to the apple. Add salt and sugar and stir thoroughly.
