Cooking for me is the best form of relaxation.
Having come from a family of home cooks, it has been relatively easy to slip into this role.
Cooking is fun.
And there are so many rewards. There is nothing more pleasing then seeing the people you cooked for glowing with gratitude and appreciation. That's what good food does to most people.
My first recipe is Home Made Gnocchi with Mushroom sauce and a simple green salad.
It sounds complicated but truly it's easy and if you are organised it will take you just under an hour.
For the Gnocchi you will need:
Potatoes (one medium to large potato per serving)
Flour (one table spoon per potato)
Maizena (one table spoon per potato)
Baking powder (half a teaspoon per potato)
Salt and paper to taste
Directions:
Boil potatoes and mash until creamy. Cool down until luke warm and add flour, maizena, baking powder and season with salt and pepper. Stir until well combined.
On the kitchen counter roll out your doughif its sticky add tiny bit of more flour but not too much as it will become stodgy. Roll out into a cylinder and cut into small mouthfuls. Cook in salty water just before serving.
For the mushroom sauce you will need:
Mushrooms (any types of mushrooms - I was lucky to get porcini from Ital Deli. They are in my opinion the most delicious mushrooms on earth)
Fresh Garlic chopped finely (as much or as little as you want)
One large onion chopped finely
Italian Herb Spice
Two tablespoon of Butter
Two tablespoon Olive Oil (Truffle oil optional)
Cream
Salt and pepper to season
Chopped fresh parsley
Directions:
In a frying pan melt the butter with the oil add garlic and onion and sautÈ for a few minutes then add the mushrooms and fry till golden brown. Add the cream and Italian Herb Spice salt and pepper to season. Finish off with fresh parsley right at the end.
The salad for this dish needs to be green and simple with a dash of fresh lemon juice and a generous helping of olive oil.
How simple is that
You can do it fast and effortless but the most important thing you must enjoy it. Relish in your space. Be creative and add your personality onto each plate you produce.
