I am Kesri Maraj and I am a International Author and writer. I live in the North coast with my husband and one child. Besides reading novels, or writing them. I love reading cook books. I am inspired by lovely home cooked meals from all over the world.
I have always had a sweet tooth .So if I am reading a cook book online or just simply have the food channel on, I am always inspired to try out new recipes. I usually create my own though! And I gather the family to be the taste tester. Most of the times it thumbs up and then sometimes I get those silent moments!
I do love cooking healthy meals from scratch, such as homemade breads to pasta to simple light sauces that compliment a meal - most of all decadent desserts. My favourite dish has to be enchiladas hot and spicy! Or a bowl of crunchy salad with my own zesty homemade dressings. Desserts are too many on the list to choose from, but if it had to be it, would be my cheesecake ice cream trifle , or falooda with cheesecake ice cream with rose syrup.
It is a must for every kitchen to have a outstanding cook book. One that does it for me, has to be THE SPICEBOOK by Sallie Morris & Lesley Mackley. And A-Z reference & cook's kitchen bible.
I do hope to inspire young and elderly people to love literature. Love what you do, only if you, feel its the best for you. Trying out new recipes can be exciting. If it does not work out keep trying. I do hope that one of my many recipes can be marketed in our daily chain stores, or bakeries anywhere in the world. There is nothing better than chasing after your dreams.
Coconuttie Cadbury Bran Muffins
Note: This is and eggless and no oil recipe
Ingredients -
500g Bran muffin ready mix
350ml full cream fresh milk - hot milk
10 Marie biscuits broken to chunky pieces
2 TBS brown sugar
1 cup desiccated coconut powder
1 slab chocolate of Cadbury chocolate or own preference
70 g plain or salted peanuts
12 paper cups - in muffin tray
Method:
Toast desiccated coconut till lightly brown. Then mix it in a bowl with the 2tbls brown sugar also add the 70g peanuts then the 10 Marie biscuits- break into rough pieces
Add the 500g bran muffin mix. Last melt the chocolate to the 350ml of fresh full cream milk - boil - hot milk.
Once all the ingredients have been mixed well fill in muffin cups and bake in a 120 degree oven for 25 mins.
