Take a hint from "Moms" and do what we do when we want to make you feel special, or celebrate you or comfort you. We feed you
Now there is an easy way to feed Mom and make her feel special. It requires little imagination (I'm giving you the hints so it's doesn't count for thinking of this all by yourself) it does require dough not the kind you make in the kitchen but rather the kind that you put 40 hours in to get. Yes, more simply said you can take Mom out for dinner. There are some amazing places locally that serve up sumptuous meals (see restaurants advertising Mother's Day Special Dinners).
Or you can prepare something fast and easy and make her proud. Here is an easy recipe for a delicious fish dish.
Ingredients:
- 4 pickling onions, peeled
- 1 tablespoon chopped red onion
- 1 tablespoon freshly chopped fennel
- 1 teaspoon lime juice
- 1/4 teaspoon toasted sesame oil
- Coarse salt and pepper
- 2 fillets wild salmon
- 3 heads bok choy, halved
- Olive oil, for drizzling
Directions
Heat grill or grill pan to medium-high. In a medium bowl, combine onions, fennel, lime juice, and sesame oil grill until soft. Season to taste with salt and pepper and set aside.
Season salmon and bok choy with salt and pepper and drizzle with olive oil.
Grill salmon, flipping halfway through, until cooked through, 3 to 4 minutes per side. Grill bok choy until bright green and slightly wilted, about 1 minute per side. Spoon grilled pickle onions over fish to serve.
Do your heart and body good, eat fish. Studies show that eating fish at least once a week, especially cold-water species high in omega-3 fatty acids, reduces the risk of heart problems dramatically. Other research suggests that regularly eating omega-3-rich fish may prevent or relieve depression, joint problems, Alzheimer's disease and, perhaps, several cancers. Even seafood less bountiful in omega-3s, like scallops and crab, are rich in other key nutrients and offer a rich flavor that belies their lean, healthful nature.
