Kasia Yoko's Happiness Elixir - Immunity-Boosting Granadilla Juice

A golden, soul-warming elixir made with organic passion fruit, wild raw honey, and healing spices. Featured in The Bugle. Because food is your pharmacy - and when you feel good, you can't be anything but happy.

This recipe should yield +/- 10lt

INGREDIENTS

5 kilograms organic granadilla (passion fruit)

500 grams raw wild honey

12 lemons/limes, juiced

3 lemongrass stalks

handful of fresh oraganum

Big chunk of fresh ginger

Small chunk of fresh tumeric

1 tablespoons allspice corns

STEPS

1. Prepare the fruit: Wash the 5 kilograms organic granadilla thoroughly. Halve and scoop out all the pulp and seeds into a jug, place the shells into a pot with 3lt of water (you will need a 5lt pot). Boil the granadilla shells for 90min.

2. Blend the granadilla with the herbs and spices using good mineral water. You can do it in three blender rounds.

3 Strain the juice: Pour through a muslin cloth or fine sieve. Allow to drip naturally. Squeeze the last drop.

4. Let the water from the granadilla shells cool before adding to the Granadilla juice. Now add lemon and honey. Taste, make it sweet and luscious, you can always dilute with boiling water for hot toddy or with sparkling water for that happy-hour cocktail.

5. Sterilise the bottles: Place clean glass bottles in boiling water and sterilise thoroughly. Keep them hot until you are ready to fill.

6. Pour the finished juice into the sterelised bottles, filling right to the top. Seal immediately and tightly to create a vacuum.

7. Cool and store: Store in the fridge.

NOTES

Sourced with love - granadillas from the farming ladies at Verulam Market, honey from wild honey hunters in Zululand. Always sterilise your bottles - this is non-negotiable for long-life preservation. Properly sealed bottles can last for several months. This is old-world wisdom in a bottle: no additives, no shortcuts, just good honest food as nature intended.
