Much like fashion, food goes in and out of style in the blink of an eye. Tome is the visionary restaurateur and owner of Fabrica, in Sunningdale Centre in Durban North, and he has changed his menu to suit the demands of his growing following. Tome is using local bakers as well as locally sourced products to deliver an extensive menu, which will inspire and delight the fussiest eaters and all the local foodies.
Over the last few years people have changed the way they look at food. Food has taken on a more important role than ever before. Trends in health consciousness and diversification have pushed food providers, restaurants, and shops to provide healthier and wide-ranging options for their customers.
"We are always looking for ways to improve our menu. New trends come and go but good food is a constant," says Tome, who puts immense value at the forefront of his restaurant Fabrica. "The ability to create a menu that nourishes body and soul and offers my customers a unique experience, is what I hope will continuously set us apart. It is my hope that this new menu will be enjoyed by everyone who visits our space."
Ultimately, it's all about turning on consumers to a greater shared experience. "While we ensure that each dish is designed to nourish, and at the same time make it an unforgettable experience, which will bring my customers back for more," says Tome.
Staying up-to-date with changes in market trends, behaviours, tastes and preferences, has been a priority at Fabrica, "There is certainly a lot to think about when menu planning for the modern diner," Tome admitted, "Creating a flexible menu for Fabrica has taken a lot of planning and adjusting. Am I happy with the result I will be able to answer that question once I've chatted to my customers, they will tell me what works and what doesn't. Our options are endless and can appeal to everyone."

With plans to extend their hours to accommodate dinner requests, Tome is building his team and working on a future plan to accommodate evening dining. For the moment Fabrica has Friday pop up dinners, wine and whiskey tastings and live music entertainment once a month.
