This recipe is so yummy, you will be making it again and again, I promise. It has a lot of exotic ingredients, but trust me it is well worth it to take a drive to one of the Chinese Supermarkets in Durban North and source these ingredients.
Even though there is so much going on here, the flavour is clean and light. It must be the tangy lime that breaks the creamy coconut flavour, it does not matter what you add to this dish, keep it simple and do not overcook the veggies.
You will need:
4 TBS sesame seed oil
3 TBS Thai curry spice
1 TBS smoked paprika
10 curry leaves chopped
2 onions
3 cloves of garlic
1 red pepper
1 cup green beans
1 cup carrots diced
1 cup butternut diced
1 cup chopped green garlic stems
2 limes
1 tin coconut milk
100 Thai Noodles
Pinch of Salt
1 TBS Coconut Sugar
4 TBS Soya Sauce
Chopped roasted peanuts
2 large fresh chopped chilli
a handful of chopped green onion
Directions:
In a pan heat up the oil and add the spices. Braise the spices until fragrant and add the curry leaves, onions, garlic and red pepper. Fry until soft.
Add the beans, carrots and butternut. Stir till coated with the spices and fry for a few minutes.
Add the coconut milk and two cups of hot water.
Cook for ten minutes.
Add the noodle, salt, soya sauce, and the freshly squeezed limes to your curry and cook for additional ten minutes.
Serve with a sprinkling of peanuts chopped chilli and green onion.
