One Bowl One Love
One bowl vegan Wholefood chocolate cake recipe
Ingredients:
- 1 1/2 cups unsweetened Almond milk
- 2 tsp apple cider vinegar (unfiltered)
- 1 1/4 cups unsweetened apple puree (baby food)
- 1/2 cup strong brewed coffee
- 2/3 cup melted coconut oil
- 2 tsp pure vanilla extract
- 2 1/2 cups unbleached all purpose flour
- 1 1/3 cups coconut sugar (Checkers)
- 1 cup unsweetened cacao powder (Manoli's)
- 2 tsp bicarb (sodium bicarbonate)
- 1 tsp baking powder
- 1 tsp salt
Direction:
Preheat oven to 180 degrees
Lightly grease baking tray or cake pans
Mix the almond milk and vinegar and leave it to activate for 15 mins.
Add the coconut oil, coffee, vanilla extract, apple purŽe and beat until foamy.
Add the flour, sugar, cacao powder, bicarb, baking powder and salt to a sieve and slowly sieve over wet ingredients whilst mixing with a hand beater.
Beat until no lumps, it should be creamy and pourable.
Divide batter into x2 cake pans or into a baking tray for brownies.
Bake for 25-30 mins.
Let it cool completely before adding frosting.
For Frosting
Ingredients:
- I can coconut milk
- 3 Tbsp coconut oil
- 200 grams dates(pitted and soaked and softened)
- I tsp vanilla extract
- 1 tsp salt
- 3 Tbsp Cacao
Directions:
Add all the ingredients to a strong blender and blend into a smooth paste.
Pour over cake or brownies and refrigerate.
