Foodie - Vegetarian Roti Burger
This week I would like to share my vegetarian burger recipe. It's delicious and nutritious, very affordable and you will be making it for the rest of your days, I promise!
First we start with the roti. I made mine miniature size, as it is easier to eat this way.
Roti Ingredients:
3 cups flour
1 tsp salt
3 Tbs oil and enough water to form a soft dough
1 cup soft butter
Method:
Mix the flour and salt in a large mixing bowl and add the oil.
Rub the oil into the flour until the mixture resembles fine breadcrumbs.
Add water and mix to a fairly soft dough.
Roll out on a floured surface
Spread the dough with softened butter and roll it up like a Swiss roll.
Cover with a tea towel and leave for 30 minutes.
Break off pieces of dough and form into balls the size of tennis balls.
Roll out each ball into a small teacup disc.
Cook on non-stick pan until golden brown on both sides
For the Vegetarian Burger:
500gr soya mince
cup water
ghee
4 gloves garlic finely chopped
1Tsp chilli powder
1 big onion finely chopped
1 tsp. dried oregano
1 cup chickpea flour
1 tsp. salt
1 cup of vegetable oil for frying
Directions:
In a non-stick frying pan put the ghee and all the spices fry until golden and add the soya mince.
Coat the dry soya mince with the fried spices and then slowly add cup of water until the mince is soft and fluffy.
Now add the chickpea flour oregano and salt and set aside for an hour.
After an hour test the soya mince, it cannot be we. If slightly wet add then add more chickpea flour, until it is easy to form small balls that stick together. Squash the balls to make small patties.
Fry individual batches you should get 12-16 small burgers
You can really go to town with your vegetarian burgers. I love fried onion, tomato and feta and a dollop of yoghurt dip. Fresh crisps lettuce is a great addition and raw onion adds incredible crunch and flavour. But this is where your creativity comes into play.
