Foodie -MacÈdoine de legumes - your five-in-one, in one delicious dish
This vegetable salad is a bit of a ball ache to make and believe me, years of my mother's training, under her watchful supervision, has not made it any easier. So be prepared to spend a good hour chopping your vegetables. But it will be worth it.
My first memory of chopping this vegetable salad, or as we call it Saladka Warzywna, is standing on a small stool next to our kitchen table and being shown by mom how to cut the best miniscule pieces of vegetables. It's a warm and fuzzy kind of feeling and believe me the finer the pieces the better the flavour.
I was pleasantly surprised that my Parisian friends recognised this salad, calling it MacÈdoine de lÈgumes, its great to know that not only the Poles are crazy enough to spend an entire afternoon preparing one dish.
The good news is that you can make it in bulk and keep in an airtight container for up to ten days: So here is how to make it
You will need:
4 big potatoes (Or more depending how much you want to make)
4 big carrots
4 big green Granny Smith apples
4 long stalks of celery
1 tin of small peas
4 big gherkins
2 cups Mayonnaise
2 cups Plain Yoghurt
1 Cup fresh Dill
1 cup fresh Chives
Salt and Pepper to taste
This is what to do:
Boil the potatoes and carrots in their skins and allow to cool.
While your veggies are cooling start chopping everything else. The size of the vegetables should not be bigger thanpetit poisor as we call it in English a very small green pea, so 3mm cubed or smaller.
Throw everything together into a large mixing bowl, add the mayonnaise and the yoghurt. Finely chop the fresh dill and chives. Add to the mixture and season with salt and pepper.
This salad tastes really good in a day or two as it absorbs all the flavours from herbs and spices. And what could be better you have your daily recommended requirement of five fruit and vegetables in one delicious dish
