Stuffed Onions

This recipe is for all my faithful foodies that are not afraid to eat. Sadly this is definitely not a banting recipesorry guys.

Maryn and I love to cook together and last weekend we were invited to San Lameer, where we had the opportunity to cook together. It is such a privilege to have someone in your life that you can cook with.

This recipe originates in Italy - I think - however this is my version of the dish. You can stuff the onions with whatever you like, I have chosen a deliciously yummy, kale and feta filling. Kale's earthy flavour mixed with the creamy feta and the sweet crispy onion casings, is truly a delectable experience and it is not that difficult to make. Just a bit of prepping and the messy stuffing, and the rest is done in the oven.

For this recipe you will need:

3 Large onions

1 Large bunch of kale

1 medium red pepper

I medium yellow pepper

3 medium onions chopped finely

2 TBS chopped garlic

2 TBS chopped fresh turmeric

2 TBS mild curry powder

2 chopped chillies

4 TBS coconut oil

250g feta

1 bunch fresh coriander

Salt and pepper (or notfeta gives this recipe a natural salty taste)

Firstly cook the onions until they are soft. Set aside to cool and dry.

Place the coconut oil in a large frying pan heat and then add the curry powder. Once the spices become aromatic add the chopped onions the red and yellow peppers, garlic, turmeric chillies and fry for ten minutes until soft.

Now you can add the kale and place the lid on your frying pan for the kale to cook. It should be ready in 15 minutes. Set aside and cool.

When the kale dish has cooled. Add the feta and chopped coriander and mix together.

Peel the layers of the onion and stuff the onions with the kale filling.

Preheat the oven to 200 degrees Celsius

Bake for 45 minutes until golden and crispy. Enjoy with fresh leafy salad or a herb filled yoghurt dip.
