Foodie - The most important ingredient of any food is love

Cooking is Passion.

I was probably born with a predisposition for lovingfood passed down by poverty stricken post WWII family cooks. My blurred childhood memories revolve around table set with food, foraged through clever explorations and deep personal connections.

Sounds stange

In 2017 people cannot imagine that not so long ago, my home country, was so poor that the only food items on the super market shelves were salt and vinegar.

People became very creative with very little and created interesting meals for their families.

No one ever taught me how to cook. But everyone always cooked in my house and it just rubbed off.

The easiest and the nutritious food in the world is food that has been simply preparedyes it is great to use traditional techniques that require hours of baking but alfresco food is so yummy and totally simple to make.

These two recipes could be side dishes to your meaty main or simple vegetarian toppings for your rice or pasta or whateverthis is delicious on bread or toastI used it last weekend on my home made pizzas.

Yummy Bringol

You will need:

Two big brinjols, firm sliced into strips

2 cloves finly chopped garlic

2 TBS vegetable oil

2 TBS Butter

Salt & Pepper to taste

Directions:

Salt the brinjol strips and set aside for 30 min

Rinse the brinjol and pat dry with dishcloth or paper towel

Melt butter and oil together add garlic

Add the brinjol strips and cook on highest heat until the oil smokes slightly

Turn down the heat to medium and continue cooking for 20min on medium heat until

Add salt & Pepper for taste

Enjoy with any startch or just as it is

Mediteranean Veg

You will need:

6 baby zuccini

100gr baby brocoli

One large red pepper

One large red onion

2 cloves finly chopped garlic

tsp Paprika

tsp smoked paprika

tsp origanum

2 TBS Olive Oil

2 TBS Vegetable Oil

2 TBS Butter

Directions:

Chop your vegies same size

Heat up the olis and butter add onion, garlic, paprika, smoked paprika and origanum and let it braise for five minutes on high heat as soon as the onion becomes soft add the vegies lower the heat to medium and cover and continue cooking for 20 min enjoy with beautiful Greek Salad
