Green Banana Flour: A Nutritional Powerhouse

Green banana flour is gaining popularity in the world of health-conscious cooking, and for good reason. Made from dried, unripe bananas, this gluten-free flour is packed with nutrients and offers a variety of health benefits. Unlike regular bananas, green bananas are rich in resistant starch, a type of fiber that resists digestion in the small intestine, making it an excellent pro-biotic. This means it helps feed the good bacteria in your gut, promoting a healthy digestive system. Resistant starch has also been linked to improved insulin sensitivity, making green banana flour a great choice for people looking to balance blood sugar levels.

Besides its fiber content, green banana flour is high in essential vitamins and minerals, such as potassium, magnesium, and vitamin B6, supporting muscle function, heart health, and brain function. What's more, green banana flour has a neutral taste, making it a versatile option for baking, smoothies, or even as a thickener for soups and sauces. Making your own green banana flour is super easy, you just need green bananas and lost of it. 20kg of fresh green banana makes just 1kg of flour. all you have to do is take the green banana, chop into fine slices and sundry (when sun is up), or simply put in a baking tray and fast dry in your oven on very low heat (50 degrees Celcious) for couple of hours (overnight) until completely dry and flaky. Blend on high in a blender until it turns to flour. Store in a glass container. Best stored in the fridge. The shelf life is about a month.

Because of my dislike for bananas, I often think what to do with my fathers healthy harvest of organic bananas that I am gifted with couple of times a year. I was so ecstatic to find this easy to make green banana four. I now add it to my sourdough bread and everything else that requires flour. I have not tried 100% green banana sourdough I usually add just 20% green banana four to my normal bread flour mix.

This week's recipe is a simple and delicious gluten-free pancake that's quick to make and incredibly healthy!

Green Banana Flour Pancakes

Ingredients:

- 1 cup green banana flour

- 1 teaspoon baking powder

- 1/4 teaspoon salt

- 2 eggs

- 1 cup almond milk (or milk of your choice)

- 1 tablespoon maple syrup (optional)

- 1 teaspoon vanilla extract

- Coconut oil for cooking

Instructions:

1. In a bowl, whisk together the green banana flour, baking powder, and salt.

2. In a separate bowl, beat the eggs and mix in the almond milk, maple syrup, and vanilla extract.

3. Combine the wet and dry ingredients, stirring until smooth.

4. Heat a little coconut oil in a skillet over medium heat. Pour batter onto the skillet and cook for 2-3 minutes per side, until golden brown.

5. Serve warm with your favorite toppings like fresh fruit, yogurt, or honey.
