Yummy Summer Tart

It this time of the year where the heat and humidity is trouncing with an all time high and our appetites are searching for light and fresh meals that are going to delight our pallet. My visit to the Verulam market with my girlfriends produced the base of this dish, namely the fresh onions and peppers, which are the stars of this dish.

This week my recipe is quick and easy. It will feed an entire family and will leave you smiling.

Serve this summer tart with a fresh crunchy salad. BuonAppetito!


Ingredients:

1 roll of puff pastry

6 TBS of Olive oil

1 tub Cream Cheese

1 cup grated cheddar cheese

3 medium onions

2 medium red onions

2 large shallots

1 large red pepper

1 large yellow pepper

1 large green pepper

1 large Bell pepper

5 Cloves of Garlic

3 TBS of your favourite masala

1 tspn smoked paprika

Pinch of salt

1 tspn coconut sugar (or brown sugar)

Direction:

Oil the base of a deep oven dish

Roll out the puff pastry

Poke tiny holes in the pastry with a fork

Bake for 20min on 200 degrees

Take the pastry out and allow it to cool

In the meantime use the olive oil to roast the spices, and when fragrant, add all the other ingredients except the salt and sugar.

Fry until well done and set aside.

Spread the cream cheese on the cooled baked puff pastry. It's a bit of a schlep but I used a fork and it worked, it does require a little patience.

Once the cream cheese is spread, put the onion and peppers on top and cover with the grated cheese.

Place your tart back into the oven and grill just from the top, on 250 degrees Celsius for ten minutes.

Allow the tart to cool and eat cold with a salad of your choice.

By the way you can put any topping you like and I have chosen to put the salad on top. Just a few cherry tomatoes, fresh basil off my garden hedge and fresh red onion rings and not forgetting a sprinkling of feta cheeseit truly is a glorious meal. Try it for yourself and friends and family. Enjoy.
