Cheers to your love with salmon cakes. These elegant little beauties take the spotlight this Valentine's Day Menu.

Show your loved one, how much you really care by presenting them with this simple yet delicious love dish. Packed with omega 3s, these little babies will do the trick. Easy to prepare and when placed on top of a fresh crispy salad are a champion however if you really want to spoil him, fry up some home cut chips, serve with the dipping sauce straight out of the pan and you have a truly love inspired winner!

Ingredients:
2 1/2 - cups poached and shredded salmon
1/2 - cup diced yellow/red pepper
1/2 - cup grated carrot
1/4 - cup chopped green onion
1/2 - cup chopped mushrooms
1/2 - cup diced red onion
1/4 - teaspoon dill
1/2 - teaspoon toasted sesame seeds
1/2 - teaspoon fresh garlic
1/2 - teaspoon freshly ground black pepper
1 - teaspoon salt
1 - teaspoon mustard
2 - eggs
4 - tablespoons good mayonnaise
1/4 - cup breadcrumbs
2 - tablespoons vegetable oil

Dipping cream for salmon cakes:
1/2 - cup sour cream
1 - tablespoon mustard

Directions:
In a large bowl combine shredded salmon, bell peppers, grated carrot, green onion, mushrooms, and red onion. Mix well to combine.

Then add the dill, sesame seeds, garlic, black pepper and mustard. Mix well.

Combine the eggs, and mayonnaise to the mixture and add in the breadcrumbs.

In a large saucepan over a medium heat add vegetable oil and allow it to get hot. Then take 1/4 cup of salmon mixture and pat in your hands to form a patty. Place in the pan and cook on either side for 5 minutes or until golden brown.

Make the dipping cream: Mix sour cream and mustard together. Serve on top salmon cakes for a sensational experience. ENJOY!
