Quick and easy Apple Crumpets

There is nothing quite like an apple and cinnamon combination. I love it because it reminds me of my mother's house. Those that know my mom and visit our guesthouse will know all about my mom's legendary crumpets or as we Polish call them 'Racuchy'.

They are really easy to prepare and take a few minutes to fry and when sprinkled with some vanilla sugar they are simply irresistible, so don't be afraid make a big batch and see them disappearing off the plate. They have to be eaten hot and crispy.

My mom makes these using milk and eggs. I found that they are a bit too heavy made that way so I have developed the tried and trusted family recipe and they are just as good.


Here is my version:

You will need:

3 Apples

2 cups of flour

2 cups of sparkling mineral water

10 drops of cinnamon essence or 1 heaped tspn ground cinnamon

2 TBS of brown sugar

1 tspn baking powder

tspn salt

cup of vanilla sugar

Vegetable oil to shallow fry

Direction:

Peel and cut apple into small segments and mix with the rest of the ingredients. Set aside for 30 minutes if you can, if not to worry, you can use it immediately. Make sure that the consistency of the batter is loose and runny. Similar to the consistency of crepe batter.

In a non-stick frying pan heat up a little bit of oil and ladle small amounts of the runny batter onto the hot oil. Fry until golden brown and cooked throughout.

Sprinkle with vanilla sugar and serve with fresh fruits and whipped cream or as they are. They are delicious and a perfect Diwali sweet to serve to your guests.
