They are not pretty or particularly interesting looking, they sometimes pretty gross and slimy but believe me when I tell you, mushrooms are good for you and you should include them in your diet.

For one they are suppose to keep you young. Mushrooms contain selenium, an antioxidant that helps to control damage done by free radicals. This, in combination with mushrooms' offering of Vitamin E, works to protect cells and will help reduce signs of aging.

It is also believed that mushrooms lower our blood pressure as they contain potassium, and research shows that diets that include natural sources of potassium are important in reducing high blood pressure because potassium lessens the effects of sodium on the body. This also helps to reduce the risk of stroke.

But one of my favourite reasons why I love mushrooms is that they can help you lose weight. Mushrooms are low in calories, but high in nutrients, they can be used to help you control your weight. Plus, they're versatile enough to be added to host of delicious salads, soups, sauces, or other dishes.

Like this one, my very own mushroom pate: perfect for sarmies, snacks, lunchboxes and salty cracks. This recipe has a truly earthy and delicious taste and it's really easy to make. Don't be concerned about the butterits good for youjust enjoy it!

Put the following ingredients into an oven proof dish:

500gr mushrooms chopped - any mushrooms will do - use a variety for more flavour - I used normal button mushrooms, frozen porcini mushrooms and dry porcini

4 large onions chopped

4 cloves of garlic or more if you like chopped

1 tsp dried oregano

1 tsp dried basil

1 tsp smoked paprika

1 cup chopped green onion

1 cup cashew nuts

100gr butter

2 TBS vegetable oil

Bake covered for 90 minutes in 200 degrees Celsius oven.

And 30 minutes uncovered just to brown and caramelise the onions and mushrooms.

Cool off and then blend until smooth.

Place in ovenproof pate dish and bake for 30 minutes.

Put in the fridge overnight until it sets and enjoy!
