Thai Green Bean Curry

Can you picture ten good friends sitting around a table enjoying good food?

Candles flickering, different aromas from the various dishes on the table infusing, pockets of conversations around the table, laughter bouts, Jazz playing in the background. That was what my Saturday evening was all about. Heart and soul at a close friends home. After a long busy week I felt really blessed. The menu was interesting with indigenous Indian dishes and a touch of Thai food. My favorite was this beautiful Thai Green Curry, a vegetarian version but what was different about this dish was that it only contained peas and green beans and not the usual density of vegetables crammed into most green curries.

Green Beans have recently been shown to have impressive antioxidant capacity. Just as you might expect, the antioxidant support provided by green beans provides us with some direct cardiovascular benefits. The strong carotenoid and flavonoid content of green beans also appears to give this vegetable some potentially unique anti-inflammatory benefits. The healthiest way of preparing green beans is actually to just steam them. Other options to preparing green beans are to combine them with mincemeat or sauté them with garlic as an accompaniment to a meat dish.

Today's recipe as I am sure you have guessed is a homemade Thai Green bean Curry.

ZIRA

Ingredients:

1 cup of Green Beans cut into smaller pieces

1 cup of peas

1 tsp cumin seeds

1 tsp crushed fresh garlic

3 fresh green chili

a sprig of lemongrass

1 cup of spring onion

1 bunch coriander

Dash of lemon juice

1 tsp salt

1 tblsp Coconut Oil

1 tin Coconut milk/cream

Directions:

Step 1

Liquidize the cumin, garlic, chili, lemongrass, spring onion, coriander and lemon juice to a pulp.

Step 2

Heat 1 tblsp coconut oil in a shallow pot. Add in the green pulp. Then add in your green beans and peas and sauté

Step 3

Add in 1 tin of coconut milk/cream and cook for a further 10 minutes on low heat.

Garnish with Fresh Coriander and Serve with Jasmine Rice. Is this not just so simple.

Variations to the green bean green curry is to add either chicken , fish or prawn.
