On Day 45 of the 75 Hard Challenge, when every cell is whispering for a cheat, I say: Feed it joyfully. Feed it smart.
These crispy golden nuggets do just that-no compromise on flavour, texture, or crunch. They are vegan-friendly, keto-aligned, and utterly addictive. Whether it's a lunchbox surprise, a padkos essential, or a beachside indulgence with chilli dip, this recipe delivers big joy in small bites.
Ingredients:
• 1 cup fresh cooked lentils (green or brown), mashed
• 1? cups steamed cauliflower, well-drained and mashed
• 1 big red onion, finely chopped
• 4 cloves garlic, minced
• 3 green chilli, deseeded and chopped (optional)
• 1 tsp fresh ginger, grated
• 1 cup of fresh chopped herbs (coriander and green onion)
• 2 tbsp psyllium husks (for binding)
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1/4 tsp garlic powder
• 1/4 tsp onion powder
• 1 tsp smoked paprica
• 1 tbsp Olive oil
• 3 tbsp coconut oil
For Coating:
• 4 tbsp chickpea flour mixed with 3 tbsp water (a light batter)
• 1 cup almond flour
• 2 tbsp sesame seeds (white or black)
Method
1. Sauté the onion, garlic, chilli, and ginger in a teaspoon of olive oil until soft and fragrant.
2. In a large bowl, mix mashed lentils and cauliflower. Add the sautéed aromatics.
3. Stir in psyllium husks, fresh herbs, salt, pepper, garlic powder, smoked paprica and onion powder. Mix well. Let it sit for 5-10 minutes so the psyllium activates and binds the mixture.
4. Shape into small nuggets or patties-whatever your inner artist desires.
5. Dip each nugget in the chickpea flour batter, then coat in a mix of almond flour and sesame seeds.
6. Pan-fry in non-stick pan in coconut oil until golden on both sides. Alternatively, bake at 180°C (356°F) for 20-25 minutes, flipping once halfway.
Serving Suggestions:
• Serve warm with a mushroom sauce and green salad for a plated main.
• Pack into beach baskets with a fiery chilli dip and lemon wedges.
• Sneak into lunchboxes with tzatziki or hummus.
• Enjoy cold from the fridge-because yes, they're still that good.
