Methie (or methi) is the term used in India for fenugreek.Methie lagan or Savoury fenugreek bake is a very tasty and easy to prepare appetizer, suitable for any occasion.
This week I have a recipe from my beautiful friend Atisha Ghila. Like me Atisha is a phenomenal home cook and often posts her home cooked meals on Instagram. I love everything about Atisha, she is a high powered local attorney, a wife to a handsome husband and they have two adorable children, yet she finds the time to cook for her family and not just cook, Atisha prepares elaborate meals for her family most days and she is a real inspiration to me.
This week's recipe is Methi Lagan a savoury baked bread. This recipe seems to have originated amongst the Indians from South Africa. Methi, or Fenugreek as it is commonly known, is one of the oldest cultivated medicinal plants native to southern Europe and Asia. The name itself has an exotic ring, and it should, as widely travelled as it is. A very popular plant grown throughout Mediterranean regions, Argentina, North Africa, France, India, and the US, fenugreek is also mentioned in detail in Egyptian papyrus writings circa 1500 B.C. Fenugreek seeds are rich in minerals such as iron, potassium, calcium, selenium, copper, zinc, manganese and magnesium. In the vitamin department, it contains thiamin, folic acid, riboflavin, pyridoxine (vitamin B6), niacin, and vitamins A and C.
For this recipe we use the fenugreek sprouts available at any Asian store, I get mine freely at the Verulam market. Oh and for all my ladies friends out there, fenugreek has been attributed with the ability to promote breast growth in women, although no studies prove it decisively. But another key compound, diosgenin, has been shown to increase milk flow, which makes this herb very popular among breastfeeding mothers. However, fenugreek can cause uterine contractions, so it's advised that pregnant women avoid fenugreek in any form.
Research also indicates that the diosgenin in fenugreek may play an important part in inhibiting several types of cancer.
For this recipe you will need:
1 cup cake flour
1 cup gram flour
1 cup soji (tasty wheat)
3 tablespoons sugar
1 teaspoon Dhania powder
1 Teaspoon Jeera powder
4 teaspoons baking powder
Directions:
Put all of the above ingredients into a large bowl.
Add the following thereafter:
2 cups fresh methi leaves
2 finely chopped onions
2 cups fresh Dhania
4 Green chillies
A teaspoon Ginger
A teaspoon of fresh garlic
Next add:
3 teaspoons lemon juice
2 cups milk
1 cream style sweetcorn
3/4 cup oil
Mix well and empty into a casserole or baking tray.
Sprinkle thill / mustard seeds on top and bake for 45 minutes at 180°C
