Foodie: Orange Candy Delights - Diwali Pleasures

This week's recipe is a real gem. It is the first time I tried it and I made enough to share with most of my family and friends and nine out of ten tasters said it was the best candy they ever tasted.

I am not big on sweets, but lately I have had a slight craving for decadence and why not We only get one chance at this life, so why not just grab it with both hands and get creative.

I think it is at this point that I must warn you that this recipe takes a couple of hours, so do it while you are doing other things; trust me if you follow my directions you will not regret doing it, and if you are celebrating Diwali even better! Your Aunties and Uncles will love you forever.

For this recipe you will need:

Orange peel from 3 large oranges

1 cup brown sugar

2 cups raw honey

1 cup water

cup caster sugar

2 slabs Lindt Chocolate (Or any good dark chocolate - must be dark chocolate - I used chilli flavour - Yum)

cup fresh cream

Direction:

Cut the peel into long strips

Boil the peel strips in water for 10 minutes. Discard the water and boil again in fresh water. This will take the nasty orange peel bitterness away.

Dry the orange rind and set them aside.

In a separate pan place the brown sugar, honey and water and cook until dissolved and bubbly. Add the orange peel and cook down until nicely coated and sticky.

Place the peel strips on a baking tray and sprinkle with caster sugar.

Bake at 100 degrees Celsius for 2 hours until dry.

Place pieces of the dark chocolate in a pot on top of a moderate heat and add the cream. Allow for the chocolate to melt gently over passive steam remember to be patient and do not over heat the chocolate as it will go hard and crumbly.

Once the chocolate has melted, dip each orange strip in the chocolate and place on wax paper to cool.
