Chef Steven Is Bringing Sexy Back To Beluga

Steven Kruger is the new Chef at Beluga Restaurant at Gateway and he is one serious individual. Having worked around the world in some challenging and rewarding conditions aboard luxury yachts and in kitchens where creativity and ingenuity was just a small component of the daily menu, chef Steven has now embarked on wowing the KZN culinary world with his genius gastronomic talent.

Chef Steven trained under RichardCarstens, one ofSouth Africa'saward winningchefs at Lynton Hall on the South Coast. But it was a family tragedy that brought a young schoolboy to the family kitchen when a serious car accident rendered Chef Steven's father bedridden.

At a young age Chef Steven was cooking up a storm in the family kitchen and when the time came to choose a career, his grandmother advised him to sign up at a cooking school. So while he studied via correspondence Chef Steven worked in a local steakhouse where Richard Carstens found him and recognised the potential in the eighteen year old.

Under Richard Carstens' mentorship Chef Steven worked his way from commis to pastry chef and then sous chef before taking over as head chef at the age of 23. During his time at Lynton Hall, they won a Five Star Award for Fine Dining with American Express, as well as being recognised as one of the Top 50 Restaurants in SA with Wine Magazine.

Chef Steven loves food that stimulates all the senses. While working in one of Cape Town's trendies restaurants, he broke down the flavour tones of Issey Miyake perfume and created a dish which comprised of the flavours and the waitresses that served the dishes were sprayed with the perfume before serving the plates.

"I wanted to see what happens when people not only eat but simultaneously breathe up the flavour." He told The Bugle. "Here in Beluga I have toned it down but soon I will be introducing 'de gastronomy menu' which you must book for four days in advance and which I'm sure will be mind blowing."

Its true, Chef Steven has exciting plans for Beluga. Historically most of Beluga's sauces and condiments came from a central kitchen; today Chef Steven is making it from scratch. He has introduced freshl new authentic flavours and locally sourced produce; there is an underlying sensuality about his food.
