Foodie - Yummy Vegan with Calorie free I Shiitaki noodle

We all want to eat more consciously. We have no choice, life is filled with junk and empty calories. So the other day while doing my social Media bit I came across the no calorie noodle and got really happyI mean are you for real Guilt free noodles! A dieter's dream come true!

It was easy to find them, I believe most stores stock them now but you can just google them and you will find the stockist. They are made out of Japanese Shiitaki mushrooms, which are really nutritious and good for you. They don't taste like much but they absorb flavours like magic and that is what you want from pasta, isn't it

So I will be honest, you need a lot of taste and flavour to make these noodles yum. I made a Kasia inspired Green Thai Curry Paste and that did the trick.

So for the Curry paste you will need:

1 tin coconut Cream

5 Cloves of garlic

2 lime leaves

a handful of curry leaves

1 head of lemongrass

1 onion

3 green chillies

3 TBS Coconut oil

For the curry you will need:

2 onions

2 chillies

1 cup of mushrooms

3 cups of chopped veggies of your choice

3 TBS Coconut Oil

2 TBS Curry Powder

2 x Packets No Calorie Shiitaki Noodle rinsed and drained

For the Curry paste:

Blend everything except the coconut oil in an electric blender. Once smooth fry the mix in the coconut oil until fragrant. Set aside.

For Curry:

Place the coconut oil in the frying pan. Add curry spice and fry for a minute and then add the onion and chillies. Fry until the onions start smelling sweet and then add the mushrooms and the vegetables.

After fifteen minutes on medium high heat, the vegetables will be starting to become soft. Add the curry paste, salt and some water, depending how runny or thick you want your curry to be.
