Janice Annetts is not just an amazing chef/foodstylist/caterer, she is also my friend. We have been having so much fun over the years preparing food for our legendary parties. HONEY GLAZED BUTTERNUT & CREAM CHEESE ROULADE

INGREDIENTS:

6 free range eggs

2ml salt

2ml pepper

30g chopped spinach or rocket or coriander

200g oven roasted butternut

250g tub full fat smooth plain cream cheese

30ml sweet chilli sauce

Non-stick cooking spray

METHOD:

Pre-heat oven to 180 C

Grease a swiss roll pan

Whisk the whole eggs until thick & frothy; must resemble shaving cream

Fold in chopped spinach or greens of your choice

Spread evenly over the base of the swiss roll pan

Bake for 15 minutes or until golden brown

Remove from swiss roll pan and allow to cool on a wire wrack

Soften cream cheese by whisking until smooth & easily spreadable

Blend the sweet chilli into the cooked butternut

Turn roulade onto a greased surface and spread cream cheese evenly over the base of the roulade

Evenly distribute the roasted & cooled butternut over the base of the roulade and roll up

Cut the ends of the roulade off and slice into 12 equal slices with an electric carving knife

You can serve this as a starter with a rocket & pecan nut salad or use as canapes for a party

Serve at room temperature
