Chicken Peri Peri
One of my ideas was to pick recipes from women who have influenced my food life -- maybe a recipe from my mother or my grandma, or perhaps favorite foods of women who have made history. When researching favourite food of women who have made history it is so humbling to note that the cuisine chosen is quite simple from Michelle Obama who loves pizza and fries to Helen Zille who says street food especially a Cape Town Gatsby is one of her favourites. So throughout August I shall be sharing special simple recipes by women that have influenced my career in food. These women shaped my course in life and I am eternally grateful. Lets begin with my mom.
Mom makes the most delicious chicken peri peri. A mixture of chicken coated with spice, flash fried and then baked in the oven covered with tomato and potato slices. So Chicken Peri Peri is our dish of the week.

Recipe
You will require:
1 skinless chicken cut into pieces
1 tsp garlic crushed
1 tsp ginger crushed
Pinch of tumeric
1 tsp chilli flakes
1 tsp salt
2 tblsp lemon juice
4 tblsp breadcrumbs
3 potatoes sliced
2 tomatoes sliced
Oil
Fresh Coriander chopped
Step 1
Coat chicken with garlic, ginger, tumeric, chilli flakes lemon juice, bread crumbs and salt.
Step 2
Flash fry the chicken pieces in shallow oil and remove.
Step 3
Place the chicken pieces in a baking tray, layer with potato and tomato slices and throw the leftover oil from the flash fry over
Bake in the oven at 180 degrees for I hour.
Garnish with coriander just before serving.
