There is nothing more precious than making a birthday cake for the ones that you love. Its better then any gift you can ever give. And making it special by taking a little bit of time from our busy schedule and just making it happen.
My Mom's birthday was last Friday and there is absolutely no denying that my mom has the sweetest tooth in the whole wide world, hence maybe the diabetes but never mind, its all under control and this recipe is so good for you, you might not even notice a few teaspoons of sugar.
It doesn't have to be anyone's birthday for you to whip up this easy to make cake, make it anyway and let me know what you think.
You will need:
2 cups raspberries
2 cups chopped kiwi fruit
1 cup fresh cream
1 cup ready made custard
1 packet of tennis biscuits
2 cups almond meal
200 gr melted butter
Sugar, you can use as much or as little as you like. You can also use honey or any of those unhealthy sugar substitutes its up to you. Taste and make sure its not too sweet
First the base:
Smash the biscuits to smithereens, add the almond meal, a pinch of sugar and the melted butter. Line the base of a cake tin not thicker then 1cm in height, and chill in the fridge.
For the topping:
Whip the fresh cream and sugar until solid, add has firm peaks.
Apply a layer of custard to the base and top it with the whipped cream and the next layer is the fruit. If it was a cake for me I would just throw the lot on top but because it is a birthday cake for my Mom I arranged the fruit in a respectable pattern.
Make someone's day without the guilt. This is really a healthy alternative to a naughty treat!
