Ciasto Miodowe - Going back to my roots with this traditional Honey and Semolina cake

There are some things that I just cannot let go from my childhood, like the smell of the freshly baked bread and the excitememnt on the Christmas morning. Ciasto Miodowe is one of those nastalgic bakes that takes me straight back to my homeland. It is a delicious cake to have with your tea at any time of the day and it is also a great birthday cake that you can dress any which way you like. I chose cherries for my friends' birthday cakes.

And here is how you can make it:

For the cake:

1kg cake flour

2100 g butter

1 glass sugar

14 TBSP honey

4 eggs

2Tsp Bacarbanated Soda

For the semolina cream:

2lt milk

24 TBSP Semolina

1 cup sugar

300g butter

For the chocolate topping:

150 g butter

6 TBSP Cocao

6 TBSP sugar

6 TBSP milk

This is how I made it:

For the cake mix all ingredients and divide into 3 equal portions. Line a big 35cmx20cm baking tray and bake three cakes for about 15 minutes in 180'C oven.

For the semolina Cream

Boil the milk, turn down the heat and add sugar until it desolves and the semolina and stir until it thickens for about 10 minutes.

Set aside until it cools completely and then slowly add tablespoons of butter.

For the chocolate topping:

Add all the ingredients to melted butter and allow to dissolve. Set aside and cool off.

Layer the cake sheets with the semolina cream and pour the chocolate on topit is truly delicious try it and let me know how it turned out!
