Sylvester Joseph Nair is Executive Chef at Boulevard 44, the Boutique Hotel in Umhlali. Having completed his studies at the Culinary Academy at Becksberg Wine Estate, Sylvester brings a fresh and innovative flair to the stylish space at Green Food Studio in Boulevard 44.

The Green Food Studio is an open plan kitchen that creates a vibe, which allows you to check out the action on the kitchen floor. The Green Food Studio is renown for their fresh fish, seafood, exotic Indian cuisine and, of course, a fair share of healthy attitude.

"I am bringing back that old school cuisine with a modern twist." Chef Sylvester Joseph Nair told me, "I have introduced fresh, clean flavours. Fine dining that is still comforting but it looks fantastic, and is good for you."

Modern, funky, yet still classical, chef Sylvester Joseph Nair will not compromise on flavour, "What many people do not realize is that even though I am young I have been in the kitchen since the age of nine, cooking with my father who is a great internationally renown chef."

Boulevard 44's signature dishes are a B44 seafood platter, which is a selection of fresh seafood and shellfish, consisting of fresh mussels cooked in a creamy white wine and garlic sauce. Grilled lemon grass line fish, pan fried tiger prawns cooked to perfection, pan fried langoustines, grilled crayfish and deep fried calamari, all served with spicy Thai rice and choux string fries.
