Foodie - My Famous Granola Muesli

As always a list of goodies I have to get ready for them to take with. One is my yummy onion marmalade and the other is my famous granola Muesli, which I will share the recipe with you today.
It is expensive, but it's a perfect way to start a day. Even if you run out of milk and yoghurt, which often happens in my sons' hectic lives, it's a perfect snack on its own and so easy to make and here is the recipe:
You will need:
4 cups Good Oats - Not the fast cooking ones
2 cups shredded coconut
1 cup sunflower seed
1 cup sesame seeds
1 cup linseeds
1 cup poppy seeds
1 cup cashew nuts chopped
1 cup brazil nuts chopped
1 cup almonds chopped
1 cup macadamia nuts chopped
1 cup pecan nuts chopped
1/2 cup sesame seed oil
1/2 cup avocado oil
1 cup raw honey
Ok I know it's a lot of ingredients but it keeps so well in an airtight container in the fridge, and on the bright side, you do not have to worry about breakfast for at least the first month.
Mix everything together. I use my hands as you have to make sure that the honey and the oils evenly coat everything. Place the mixture in a baking tray in the oven for about an hour on 200 degrees Celsius, stir every 10-15 minutes until it browns evenly and becomes slightly crispy.
Cool the muesli completely before adding:
1 cup dry currents
1 cup Goji Berries
1 cup cranberries
1 cup raisings
2 cups of puffed rice
Mix well and place in airtight containers. It will be good to consume for three months.
My boys have it for breakfast with fresh fruit and yoghurt, blend it into smoothies for a quick lunch and it makes a perfect midnight nibble after a heavy night partying. What more could a student want, besides his mom.
