It was more than an event. It was a gastronomic movement. Durban, glimmered with the winter sun slicing through the skyline, Unilever Food Solutions wrapped up its Future Menus Vol. 3 series and crowned its 2025 Chefs of the Year in a celebration that stirred the senses and stirred the soul.

Held on 3 July, the Durban edition was no ordinary industry gathering. It was an explosion of taste, trend, talent, and triumph - proving that South Africa's culinary heart beats boldly, bravely, and with boundless creativity.

Walking into the venue, one was immediately met with the intoxicating aromas of borderless cuisine: smoky umami, subtle ferments, fermented crunch, and spice-packed storytelling. From reimagined street food to age-old culinary roots made new again, every dish told a tale - one steeped in culture but ready for tomorrow.

The star of the show? The Future Menus 2025 trend report itself, igniting conversations around four global shifts shaping how we'll eat in the coming year:

• Street Food Couture - where elevated plating meets the raw joy of street eats.

• Borderless Cuisine - because good food knows no flags or borders.

• Culinary Roots - a soulful return to heritage and humble ingredients.

"These aren't just trends," said Chef Mary Worthington, UFS Culinary Experience Advisor. "They're lifelines - ways for chefs to stay connected, relevant, and inspired in a world changing faster than a soufflé in a hot oven."

And then came the crescendo: the Chef of the Year 2025 finals. The room turned electric as the best of the best stepped into the heat - junior and senior chefs with hearts on fire and knives in hand, ready to create magic.

Junior Winners: Pholoso Sebola - The Marriott Hotel, Lakishia Dayalram - 1000 Hills Chefs School, Banyana Monyuku - The Marriott Hotel.

Senior Winners: Zandria De Nobrega - The Fusion Cooking School, Olwethu Vivi - Louisvale Wines, Melusi Twala - The Marriott Hotel.

Every plate that left their stations was a tribute to innovation and identity. Their creations weren't just food - they were stories, dreams, defiance, and celebration on a plate. The competition was fierce, but the camaraderie was fiercer. South Africa's culinary future looks deliciously bright.

More than just a showcase, the event underscored the power of food to reflect who we are and where we're going.
