My Greek-Inspired Stuffed Aubergines Rolls with Pomegranate Dressing

Ingredients:
For the Aubergines
2 large aubergines
Olive oil for roasting
For the Filling
1 container chunky cottage cheese
1 cup roasted walnuts, finely chopped
1 cup fresh herbs, finely chopped (parsley, mint, dill, basil, or your favourites)
5 roasted garlic cloves
5 tablespoons olive oil
Salt and black pepper to taste
For the Dressing
1 cup fresh pomegranate seeds
Handful of roasted pine nuts
Pomegranate molasses
Fresh lime juice
Olive oil
Fresh chopped herbs
Method
1.Preheat your grill or oven grill.
2.Slice the aubergines lengthwise into long strips. Generously brush each slice with olive oil.
3.Grill the aubergines until soft, golden, and tender. Set aside to cool slightly.
4.In a mixing bowl, combine the cottage cheese, roasted garlic, chopped herbs, walnuts, and olive oil. Season with salt and black pepper.
5.Mix well until you have a rich, textured paste.
6.Spoon the filling into the centre of each aubergine slice and gently roll closed.
7.Arrange the rolls neatly in a serving dish.
8.In a separate bowl, combine the pomegranate seeds, roasted pine nuts, a drizzle of pomegranate molasses, fresh lime juice, olive oil, and herbs.
9.Spoon the dressing generously over the aubergine rolls just before serving.
Serving Suggestion: Serve slightly warm or at room temperature with fresh sourdough bread, olives, and a simple crisp salad. This dish makes a beautiful light lunch, elegant starter, or centrepiece for a shared Mediterranean table.
